ROSSI MALVASIA TEMPLARA RISERVA 2016
Malvasia Templara Riserva wine grapes come from the oldest and the best located parts of the vineyard (90% of vines come from black and 10% come from red soil). These are extremely old vines, which yield between 0.5 to 0.8 kilograms of grapes per vine, which is about three times less than the normal yield. After harvesting these top quality grapes, maceration lasts for only two days. The turbulent part of the fermentation is done in stainless steel barrels, and the rest in wooden barrels of 500 litres. At the end of the fermentation, the wine, together with the lees, is aged for further two years. The wine is then removed from the barrel, separated from its lees and placed in a stainless steel barrel and left to age for another year. It is then bottled and capped with top-quality corks, which allow the wine to last for at least ten years. Finally, the wine is left to sit in the bottle for another year in order to reach its full potential.
It pairs beautifully with scampi risotto, Istrian fuži pasta with truffles and seashell and asparagus tagliatelle. Serving temperature: 10 – 12°C.
